Leek and coconut milk soup recipe

Preparation

Peel and mince the onion. Brown it in a casserole dish with a nice drizzle of olive oil and the curry for a few minutes over medium heat.

Add the minced and well-rinsed leeks and sauté for 5 minutes.

Peel the potatoes and cut them into cubes. Add them to the pan and pour in the water. Cook covered for about twenty minutes (until the potato pieces are tender).

Add the coconut milk and blend in the blender to obtain a nice smooth texture. Adjust the seasoning with salt and pepper and serve hot.
