Here are the essential ingredients to make a lemon cake for 4 people :

  • 2 lemons
  • 120 g softened butter
  • 120g flour
  • 120g sugar
  • 2 eggs
  • 11g baking powder

The preparation of Cyril Lignac’s lemon cake

Now that you have all the ingredients, the recipe can begin. Here are the preparation steps to follow to make the lemon cake by Cyril Lignac, ready in 30 minutes flat:

  1. To start, preheat the oven to 180°C.
  2. Put the softened butter, sugar and eggs in a bowl and mix them with a whisk. Add the flour, previously mixed with the baking powder.
  3. Squeeze and zest the two lemons. Then add the juice and zest of the lemons to the cake mix. Mix to combine the ingredients well.
  4. Pour into a cake tin and bake for 20 minutes. When cooked, unmold the cake and serve.

Chef’s tip: Cyril Lignac reminds us that this cake can be made with all kinds of citrus fruits, depending on availability and seasons. At the moment, for example, the lemon can be replaced by blood oranges or some clementines. Alternatively, you can also use yuzu, the famous Japanese citrus fruit with an irresistible aroma.
