Cyril Lignac reveals his quick and easy recipe for crêpes Suzette for Candlemas

The recipe for crêpes Suzette by Cyril Lignac:

Ingredients for 4 persons :

The pancake batter:

  • 300g flour
  • 3 eggs
  • 2 tbsp. oil soup
  • 70 cl whole milk
  • 3 tbsp. sugar
  • 5 cl of orange blossom
  • 1 orange zest

Suzette butter:

  • 100 g softened butter
  • 1 orange zest
  • 1 orange juice + 1 lemon juice
  • 15g icing sugar
  • 5 cl of Grand Marnier (optional)
  • Neutral oil
  • 1 orange peeled and cut into thin rounds
  • Some candied zest (optional)

In a bowl, mix the flour with the eggs, sugar, oil, milk and orange blossom using a whisk. Add the orange zest using a microplane. Leave to stand while you make the Suzette butter.

In a salad bowl, pour the orange juice and lemon juice over the softened butter. Mix with the Maryse, add the orange zest, mix again. Add the icing sugar and the Grand Marnier. Put in the fridge.

In a hot crepe maker, pass an oiled paper towel. Pour a ladle of batter and brown on both sides with a knob of Suzette butter. Fold the crepe in 4, place it on the plate then repeat the operation for each crepe. Serve with a few slices of orange and candied zest.
