spinach with parsnip cream: recipe
If you like creamed spinach, you’ll love this recipe: parsnip cream, very easy to prepare, brings a new flavor to this great classic.

Preparation time: 10 minutes
Cooking time : 20 minutes
Sort the spinach, removing the stems and damaged leaves.
Throw them, still wet, in a saucepan without adding fat (the water that remains on the leaves is sufficient).
Salt, cover and cook for 4 to 5 minutes depending on the size of the leaves.
After cooking, drain them in a colander and set aside.
Prepare the parsnip cream.
Peel the parsnip and cut it into rounds.
In a saucepan, boil water with ½ vegetable stock cube.
Add the parsnip and cook for about a quarter of an hour, until tender.
Strain, reserving the broth.
In a blender, mix the parsnips by adding, little by little, broth and liquid cream until you obtain the desired consistency.
Heat the spinach for 1 minute.
Add the parsnip cream and serve immediately.
Tips for a successful recipe
Steaming is the healthiest way to cook spinach. It allows not to add fat, to that of the cream.
